1. preheat oven to 350
2. lay tilapia fillets in pan, drizzle with olive oil and lemon juice. flip+repeat.
3. cook in oven 15-20 minutes.
4. while cooling, chop peppers, red onion and tomatoes. toss in hot sauce, salt & pep to taste.
5. lightly push fish apart with knife, mix with vegetables.
serve with yellow rice, lime wedge & grilled tortillas.
