one of the first things i learned to cook was oven baked fries. they have been a staple ever since. sweet potato fries on the other hand, have given me a tough time, but i have it figured out. and it’s for real.

i leave the skins on, carve out any imperfections or weird spots. cut them however you like, but try your best to keep the size consistent. use a large bowl to toss them with olive oil, salt and pepper. preheat that oven to 450.

drop those potatoes on your baking sheet, arrange them evenly. put in oven.
set your timer for 15 minutes, when that’s up, flip them over using a spatula and cook for another 10.

we like ours crispy and kind of greasy. i also make a honey mustard with even parts honey and well, mustard (dijon, brown, spicy, whatever) — chill that while your potatoes cook and then you are good to freaking GO!
